Growing in the lush backyard of a tharavadu or ancestral home in the seaside town of Kozhikode in Kerala is this curious root, locally called Manga Inji or Mango Ginger. This nutritious plant is peculiar, as it closely resembles ginger and is of that family, but tastes like delectable raw mango! When the time is ripe, this wholesome root is dug out of the earth, cleaned and diced. Red chillies are then sun-dried and powdered and used to pickle the mango ginger rhizome using traditional methods. This pickle is completely natural and does not contain added colours, flavours, preservatives or taste enhancers.
